Insalatina autunnale di tinca con finferli e more
Inutile che vi rifaccio tutta la storiella. Come ho scritto ieri la gita a Trevignano ha fruttato due lucci e una tinca. Alla sfilettatura della seconda sono entrata un po' nel panico: praticamente non ha carne, rispetto alla grandezza del corpo mi aspettavo molto di più. Ma soprattutto, al taglio, quello che mi ha colpito è il profumo. Ho un problema di olfatto e così ho chiamato mio figlio per vare conferma: "Cosa senti?" Odore di bosco e funghi. Ok: l'olfatto non va così male. e da qui ho sviluppato la ricetta, che poi tanto ricetta neanche è. Ho chiesto ad Anna Maria se il pesce d'acqua dolce potesse servirsi crudo e in effetti no in quanto può esser presente una tenia.Non avendo abbattitore ho surgelato in freezer per 48 ore e spero di aver evitato qualsiasi rischio.
Visto che nell'altra ricetta avevo trascurato il Bagoss, che ha un sapore molto forte, ho deciso di utilizzarlo in questo piatto per dare carattere e sapidità.
Insalatina di tinca con finferli e more (facile- 15 minuti più 48 ore in freezer più 15 minuti per la marinatura della tinca):
1 filetto di tinca pulito e spinato
more
finferli
nocciole
Bagoss
sale
Frullate 5-6 more con 10 ml di olio extra vergine di oliva. Conditevi la tinca che avrete tagliato a fettine sottili. Lasciate marinare per 15 minuti.
Completate l'insalatina con finferli tagliati a lamelle, qualche nocciola e delle fettine di Bagoss. Aggiustate di sale e servite.
